Lemon Bars with Shortbread Crust

Ingredients:

For the shortbread crust:

For the lemon filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions:

  1. Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the flour and salt, and mix until a crumbly dough forms.
  4. Press the dough into the bottom of the prepared pan and bake for 15-20 minutes, or until lightly golden.
  5. In a separate bowl, whisk together the sugar, flour, and salt.
  6. Add the eggs, lemon juice, and lemon zest, and whisk until well combined.
  7. Pour the mixture over the baked crust and return the pan to the oven.
  8. Bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly golden.
  9. Remove from the oven and let cool to room temperature.
  10. Chill in the refrigerator for at least 1 hour, or until firm.
  11. Cut into squares and serve.
